‘BISOU les Madeleines’ is a family story. A family who finds its roots in the North-Eastern French region of Lorraine, and who has always been very fond of the irresistible regional cakes. The family recipe is a well-kept secret, but let me tell you a bit about it!…
Back in the 80s during the summer holidays, my siblings and cousins used to go visit my grandparents, who live in a small, little house in the middle of the woods.
We were spending days playing and laughing, and looking after my grandmother’s hens: Jeanette and Pierrette. Every afternoon we would run to the hen house to collect the eggs, and proudly carry them back to my grandparents’s kitchen.
These fresh eggs meant one thing to us, children: ‘Madeleines’!
Fresh eggs, you got it, is one of the secret ingredients. As for the entire recipe, it was in my grandfather’s head!
A list of ingredients on a piece of paper, no measurements, no instructions, nor a recommended oven temperature!
The recipe was passed on from his mother to him, and in turn, he passed it on to me. This is how I started baking with him, paying carefully attention to every single detail in the baking process.
